Fish Batter - The Liquid - Results

This is the second test. We are now going to see which liquids are best for the batter. To maintain consitency we will use the self raising flour which won the first test. All parameters will remain the same also, only the liquid will change, the liquid volume will vary to ensure same batter consistency so please refer to the table. It would be interesting to see if the different liquids interacted with different flours as well but we will leave that for another day.

Liquid UsedTaste NotesRanking
Tap Water - The control test Smoothish batter nice appearance. Pleasing golden colour. Gives to the push, crispy with underlying chewyness.3rd
Soda WaterCrisper and lighter than tap water, preferred by everybody.1st
Sparkling WaterDid not colour as well as plain water or the Soda Water, Thicker chewier batter with little crispinessLast
Stella ArtoisCrisper and lighter than tap water, Similar batter produced to the soda water. Perhaps a little lift in flavour from the beer but to be honest in a blind tasting I think we all agreed we would be pushed to pick this beer batter from the soda water batter so Soda Water wins as better value for money but if you have no soda water use a light lager beer!2nd
